Crock-Pot Salsa Chicken
  • 3-4 chicken breasts
  • 1 packet taco seasoning
  • 1 jar salsa
  • 1/2 cup chicken broth (optional)
Add all ingredients to crock-pot. Cook on high 4 hours or low 6-8 hours, until you can easily shred with a fork. I'm away from the house for 9 hours a day, so mine cooks a little longer and it always turns out great. Perfect for tacos, enchiladas, or served with rice!

Salsa Chicken Enchiladas
  • 8 corn tortillas (flour tortillas work too), taco size
  • 1 can enchilada sauce
  • 2 cups shredded monterey jack cheese
  • Crock-Pot Salsa Chicken (or 3-4 chicken breasts, grilled and shredded
Make sure your corn tortillas are room temperature or they will crack when you try to roll them. Spray a casserole dish with cooking spray. Scoop about 1/4 cup of chicken into each tortilla and sprinkle with cheese. Roll it up and place in the pan seam side down. Top with enchilada sauce and remaining cheese. Bake at 350 degrees for 25 minutes.

Asian Chicken Lettuce Wraps (just like PF Changs)

·         1 tablespoon olive oil
·         1 pound ground chicken
·         2 cloves garlic, minced
·         ½ onion, diced
·         ¼ cup hoisin sauce
·         2 tablespoons soy sauce
·         1 tablespoon rice wine vinegar
·         1 tablespoon sesame oil
·         1 (8 oz) can whole water chestnuts, drained and diced (I use half a can)
·         Salt and freshly ground black pepper to taste
·         1 head butter lettuce Heat olive oil in a saucepan over medium high heat. Add ground chicken, garlic and onions. Be sure to crumble the chicken with a wooden spoon or spatula as it cooks and drain any excess liquid after it is done (about 6-8 minutes). Stir in the hoisin sauce, soy sauce, rice wine vinegar and sesame oil and cook an additional 3-4 minutes on medium heat. Season with salt and pepper. Spoon the chicken into lettuce wraps and eat them like tacos!
